Millet Porridge with Prunes

Ingredients (for 2 servings):

Millet Porridge with Prunes


    100 g millet

    200 ml milk (or water for a lighter version)

    1 apple

    6 dried plums (prunes)

    1 tbsp honey or sugar (to taste)

    ½ tsp cinnamon

    A pinch of salt

    1 tbsp butter (optional)

    Ground walnuts or almonds for topping (optional)


Instructions:


    Prepare the millet:

    Rinse the millet under running water, then pour boiling water over it and let it sit for a few minutes. Drain (this removes bitterness).


    Cook the millet:

    Place the millet in a small pot, add milk (or water), and a pinch of salt. Bring to a boil, then reduce the heat and simmer on low for about 15 minutes, stirring occasionally, until the liquid is absorbed and the millet is soft.


    Add the fruit:

    Meanwhile, peel and grate the apple and chop the dried plums into small pieces. When the millet is almost done, stir in the apple, plums, and cinnamon. Add more milk or water if needed. Cook for another 5 minutes.


    Finishing touches:

    For a richer taste, stir in a tablespoon of butter. Sweeten with honey or sugar to taste.


    Serving:

    Sprinkle with ground walnuts or almonds and serve warm.
