Chocolate-Vanilla Cake with Strawberries
Ingredients:
Sponge Cake:
6 eggs
180 g sugar
150 g flour
30 g cocoa powder
1 baking powder
100 ml milk
Vanilla Cream:
500 ml milk
100 g sugar
1 vanilla pod (or 1 tsp vanilla extract)
2 egg yolks
40 g cornstarch
30 g butter
Chocolate Cream with Strawberries:
200 g dark chocolate
250 ml heavy cream
250 g mascarpone cheese
2 tbsp sugar
200 g fresh strawberries (diced)
Chocolate Glaze:
100 g dark chocolate
1 tbsp butter
Instructions for Chocolate cake:
Prepare the Sponge Cake
Beat the eggs and sugar until fluffy.
Sift in the flour, cocoa, and baking powder.
Mix in the milk and pour the batter into a 24 cm cake pan.
Bake at 180°C (350°F) for about 30 minutes.
Once cooled, slice the cake into three even layers.
Prepare the Vanilla Cream
Heat 400 ml of milk with sugar and vanilla.
In a separate bowl, mix 100 ml milk with the egg yolks and cornstarch.
Slowly pour this mixture into the hot milk, stirring continuously until thickened.
Stir in the butter and let the cream cool.
Prepare the Chocolate Cream with Strawberries
Heat the heavy cream until nearly boiling and melt the chocolate in it.
Once slightly cooled, mix in the mascarpone and sugar.
Gently fold in the diced strawberries.
Assemble the Cake
Spread vanilla cream over the bottom sponge layer.
Place the second sponge layer on top and spread chocolate cream with strawberries over it.
Cover with the final sponge layer.
Prepare the Chocolate Glaze
Melt the chocolate with butter and pour it over the cake.
Decorate as desired with sugar flowers or extra strawberries.
