Bean Soup with Ravioli

Bean soup is one of the most popular and simple dishes known in many cultures around the world. It is a stew, with the main ingredients being beans, vegetables, spices, and often meat. Due to its easy preparation, availability of ingredients, and nutritional value, bean soup is an ideal meal for colder days, but it can also be adapted to suit different tastes and dietary needs.


Bean Soup with Ravioli


Ingredients:


For the soup:


    300 g dried white beans (or 2 cans of white beans)

    1 medium onion, chopped

    2 garlic cloves, chopped

    2 carrots, diced

    2 medium potatoes, diced

    1 liter vegetable or chicken broth (or water)

    2 tablespoons olive oil

    1 bay leaf

    1/2 teaspoon thyme (fresh or dried)

    Salt and pepper, to taste

    1 tablespoon balsamic vinegar (optional, for extra flavor)


For the ravioli (you can use store-bought ravioli):


    250 g fresh ravioli (e.g., ricotta and spinach, meat-filled, or your choice)


Instructions:


    Prepare the beans:

        If using dried beans, soak them overnight in water. The next day, drain and rinse the beans.

        In a large pot, heat the olive oil over medium heat and add the chopped onion and garlic. Sauté until soft and golden brown, about 5 minutes.


    Cook the soup:

        Add the diced carrots, potatoes, and soaked beans (or canned beans if you're using them).

        Pour in the vegetable or chicken broth (or water), and add the bay leaf and thyme. Cook over medium heat until the beans are tender, about 45 minutes to 1 hour, depending on the type of beans. If you're using canned beans, the soup will cook faster.

        Once the beans are soft, remove the bay leaf and season with salt and pepper to taste. If you prefer a creamier texture, you can blend the soup with an immersion blender or leave it chunky for a rustic feel.


    Cook the ravioli:

        In a separate pot, bring salted water to a boil. Once boiling, add the ravioli and cook according to package instructions (usually 3-5 minutes, until they float to the surface).

        Once the ravioli is cooked, drain them.


    Serve:

        Ladle the soup into bowls, then place a few ravioli on top of each serving.

        If desired, garnish with fresh thyme or grated Parmesan cheese.


Tips:


    For added richness, you can stir in a little butter or cream into the soup at the end.

    You can also make homemade ravioli if you have the time, but store-bought ravioli will save you time and effort.
