Ingredients:
2 liters of water
2 tablespoons of olive oil
100g fresh spinach
3 potatoes
1 small onion
2 cloves of garlic
Toasted bread cubes
Salt, pepper, chili powder, parsley
Preparation:
In a pot, heat the olive oil and sauté the chopped onion and garlic until golden brown.
Add the potatoes, cut into cubes, and cook for a bit longer.
Add the spinach (set aside a quarter of it) and pour in cold water.
Cook for about 20 minutes, then blend the soup with an immersion blender.
Add the remaining spinach and continue cooking on low heat for another 30 minutes.
Season with salt, pepper, and a little chili powder to taste.
Serve the soup with toasted bread cubes and garnish with parsley.
