Slovenian Walnut Dumplings (Orehovi štruklji) without eggs

Did you know that some dishes, which traditionally contain eggs in the recipes, can still be prepared and cooked without eggs? And they will still be fantastic.


Recipe for Walnut Dumplings with Raisins (Egg-Free)



Ingredients for the Dough:


    250 g all-purpose flour
    2 tbsp vegetable oil (such as sunflower or canola oil)
    1 tsp vinegar (or lemon juice)
    About 150 ml warm water (depending on the absorption of the flour)
    A pinch of salt

Ingredients for the Filling:


    200 g ground walnuts
    50 g raisins (optional: soak them in water or rum beforehand)
    2 tbsp sugar (adjust to taste)
    1/2 tsp cinnamon
    2 tbsp breadcrumbs (optional, for better binding)
    2 tbsp melted butter or vegetable oil

For the Side Dish:


    4-5 dried plums (pitted)
    2-3 tbsp honey (adjust to taste)

Instructions:


 Prepare the dough:

 In a bowl, sift the flour, add a pinch of salt, vegetable oil, vinegar, and gradually add warm water. Stir with a spoon until a smooth dough forms.
 Knead the dough on a floured surface for about 5–10 minutes until it is soft and elastic.
 Cover the dough with a kitchen towel and let it rest for at least 30 minutes to relax the gluten.

 Prepare the filling:

  In a bowl, mix the ground walnuts, raisins, sugar, cinnamon, and breadcrumbs (if using).
  Add the melted butter or oil and stir everything together until it forms a uniform filling.

 Shape the dumplings:

 After the dough has rested, roll it out on a floured surface into a thin rectangle.
 Evenly spread the walnut filling over the dough, leaving the edges free of filling.
 Carefully roll the dough into a long log. If necessary, gently press the edges to seal them so the filling doesn't spill out.

 Cook the dumplings:

 Bring a large pot of salted water to a boil. Once boiling, carefully add the dumplings.
 Cook for about 30-40 minutes, turning the dumplings occasionally to ensure they cook evenly.
 The dumplings are done when the dough feels soft and elastic when tested with a fork.

Prepare the side dish:

Cut the dried plums into smaller pieces (if they are too hard, you can soak them in hot water for a few minutes to soften them).

In a small pan, gently heat the honey until it becomes liquid and slightly thickens.

Add the sliced dried plums to the honey and mix gently so that the plums are coated with the honey and warmed through.

Serving:


Once the dumplings are cooked, carefully remove them from the water and slice them.
Serve the dumplings on a plate, drizzle with honey, and serve with the warm, honey-coated dried plums on the side.

These walnut dumplings are perfect as a dessert or a sweet snack with coffee or tea. The dough, made without eggs, stays soft and elastic thanks to the oil, while the walnut filling remains rich and flavorful. Enjoy!
